SUSPIROS

INGREDIENTS:

  • 12 eggs.
  • 1 kg of sugar.
  • Cinnamon.

 

PREPARATION:

Separate the egg yolks from the whites. Keep the yolks for other dishes (cortadillos). Whip the egg whites until stiff peaks form, add the sugar, and beat as much as possible. Take spoonfuls of this airy batter and place them separately on oiled or baking paper. Bake in the oven at 150º for 15-20 minutes. Sprinkle with ground cinnamon. In Carcabuey, whipped egg whites or meringue were called "gloria." Suspiros, along with roscos, were traditionally the sweets for big occasions, especially weddings.
